They do really. amazing. bread.
If they go overseas, they make it their business to find out where they can get good bread. Texture, flavour, density, it’s the perfect synergy of art and science.
In fact…some say that over the last few decades the Austrians held onto their bread making traditions just a little bit better than the Germans.
It’s these traditions that Sarah Wiener had in mind when she decided that she wanted to open a beautiful bäckerei, a bakery, in Berlin.
Obesity rates are rising in Germany. Sarah Wiener is a known entity in Germany for her passions and contributions to the food industry. She’s what they call the ‘Jamie Oliver’ of Germany because of her continued efforts to build awareness in Germany around what quality food looks like and where to source it from.
She’s on a mission to change the way Germans think about food, for the better.
She’s busy – catering, restaurants, books, cooking classes, TV, she’s working with kids programs on nutrition – she’s even popped up on SBS television in Australia.
The philosophy is clear – food must be delicious and sourced from quality ingredients. So when it came to finding the perfect baker for her bakery, she looked no futher than Helmut Gragger.
Baking started off as just a job for him but before long his job turned to a passionate obsession.
In modern times he is one of the few bakers around following old school traditions, working with a wood fired oven, with all organic ingredients and a member of the Slow Food Movement.
Thank God for people in the world like Sarah and Helmut. Oh how glorious is the bread they bake.
Sarah and Helmut’s vision for the bakery is very clear, and beautifully realised down to every detail.
If you are ever in Berlin, you simply must go to Wiener Brot (Vienna Bread) near the corner of Tucholskystrasse and Auguststrasse in Mitte.
The collection is extensive, covering every detail, element and interaction imaginable.
We captured the day they opened the shopfront in Mitte. On another morning, up with a sparrow’s fart we captured all the making-of-bread action at the bakery.
